Me and some people are about to make 2 dvds for my student union. one will be an account of a skiing holiday with 500 people (about 45 mins) and the other will be a feature length film about a 2 week long party (90 mins?)

I have an eMac (800Mhz), 300 GB hard drive, but only 384 Mb RAM

is that enough RAM?

I'm not going to use any great special effect, just transitions etc.

Typically, you'll find most editing systems equipped with at least 1 Gig of RAM. With a 32 bit processor you can't exceed 4 Gigs. G5's can cram up to 8 Gigs of RAM.
If you can, I suggest boosting the RAM, and making sure you have enough hardrive space. Your processor should be fine, but your RAM most certainly needs to be expanded.

As Digigenic pointed out..you really need more ram..especially if you are using an 800mhz single processor system. If you can't do 1 gig..at least shoot for 512 or 768. You will most certainly notice a performance increase.
