Anyone knows how to backup the footage shot into a fs100 hard drive with the panasonic p2 into a tape, using the camera as a video?

I am not entirely sure I interpreted your question correctly but here goes:
You can take 6-pin Firewire out of the Firestore and into the HVX with a 4-pin. If I remember correctly, you either go into DUB mode or VCR (can't remember which) and select 1394 in and when you press play on the Firestore, the image will appear and you can crash-record onto tape.

Or, just copy the MXF data to your hard drive, and Print To Tape with FCP, or whatever NLE you have. That will give you a much better conversion from HD to SD. Remember that putting your footage to Mini-DV tape will force convert it to SD, and you'll lose all the advantages of HD and DVCPRO-HD.
