Turning a one-take shot into a montage-sequence

Hi,
In my cinematography class I got the task to find a sequence-shot (a one-take shot) in a movie, and shoot it as a montage-sequence. So now I'm looking for one-take scenes that could be interesting to do (but also doable, so no explosions, guns, high-budget stuff). Any suggestions? What does such a one-take need to have so it makes good material for re-shooting as a montage-sequence?

If your looking at one take stuff, La La Land is a great option. The first sequence has some cuts and you couldn't recreate but theres plenty of others.
Other one is Bird Man? One of my favourites is Goodfellas (1990).
