If you are on a mac, use the H.264 codec in Quicktime Pro. Otherwise you can also encode to Windows Media Player for better compatibility for PC users, or the best way, do Flash encoding and make all your videos flv files.
There are tons of tutorials online for exact dimensions but experimenting with different settings is the best way to go.
