I would need to write a textbook to cover all of those topics -- your question is WAY too broad for an internet post, which is why no one answered it before. Do you have a specific question about one of those processes?

And "travelling matte" just means any matting process that allows you to composite a moving object over a different background -- chroma keys, luminence keys, rotoscoping, etc. all can be used to create a travelling matte.
