what would you say is better choice for a TV docu series similar to typical discoverychannel docs? or TV series Dog Whisperer?

* no chances for hi postproduction or color correction

* no filtering on camera...

wich one is more sensitive? better quality? best latitude in hard light situations? noise...?

I haven't used either camera so I can't tell you -- however, my general impression is that the Panasonic SDX900 is possibly the better camera in the aspects you are describing. I also think the SDX900 does progressive frame rates whereas the DVW790 is interlaced-scan. The Panasonic therefore may give you more of a filmic look. However, the Sony camera may be faster in low-light, I don't know.
