Always shoot in the highest resolution you can. It gives you more options in post. Shoot in HDV and capture in DV. (Most Sony HDV cameras allow for DV output).

*Where* did you see the jerkiness? If it's in the preview, then it is most likely that your CPU can't keep up with the rapidly changing video. Make sure that your preview settings are "Preview-Automatic", or even draft.

The answer is in your manual on the original disc. If there is daylight between both images you can simply use the bezier mask or event pan crop to separate them. When you composit them the images won't be ghosted.
